Wintertime on the farm is time to try new things (or bring up old habits) and see what happens. With a little bit more time away from the garden beds, projects that have been on the backburner for a while can get picked up again (i.e. citrus in the high tunnel, tea gardens, mushroom logs, no till garden beds, etc.). Tapping maples for maple syrup is one of those things......
Louisiana is DEFINITELY not known for maple syrup production!! But we will still try. We have been tapping maples for a long time (in Wisconsin, Kentucky, and Pennsylvania) but this year will mark only the second season we have tapped in Louisiana. The warm winter of 2011/2012 shut us down but as you can see from the picture, Kade is enjoying some box elder sap from the 2010 tapping in Louisiana at 47 Daisies.
Hopefully we will get some cold weather here in a month or so and be able to get out taps in!! We will keep you posted!!
