So it appears we will be entering the poultry processing arena. I have mixed feelings about the whole affair, but if I am going to eat it, I should be able to process it. This was not a planned foray, but since half of our laying hens decided that they are not hens at all, we have a dilemma.
Usually I would just pack them up and take them to one of the butcher shops which process poultry………and here is the dilemma. Apparently there is no chicken processing in the fall after a certain date. Most of the butcher shops are “done processing chickens for the year.” So……what is the logical next step…….do it yourself.
The supplies are ordered (knives, scalder, etc) and the processing will take place in the next few weeks…..
We will let you know how the rooster thinning goes!
